Strawberry Shortcake Mini Muffins ~ best summer snack with fresh strawberries in season! 😋🍓 3/4 cup vanilla @ToneItUp Protein 3/4 cup oat flour (or almond flour) 1 tsp. baking powder 1 egg or 1 flax egg 1 tsp vanilla extract 1 banana, mashed 2 Tbsp. maple syrup 1/2 cup unsweetened almond milk 1/2 cup strawberries, diced coconut oil spray Preheat oven to 350. ♨️ Combine dry ingredients & wet ingredients (except strawberries) in sep. bowls. Add wet ingredients to dry & stir to combine. 💃🏻 Gently fold in strawberries. Spray mini muffin tin with coconut oil spray & add in batter. Bake for 20-25 mins. Gorgeous brunch for your gorgeous mama 🤗💕✨ Enjoy these Pitaya Pancakes for Mother’s Day 🥞💗🤸🏼‍♀️ xxo 2 scoops @ToneItUp Protein 1 banana, mashed 1 Tbsp. unsweetened almond milk 1/2 cup egg whites 1 tsp. cinnamon Add fresh pitaya juice to make pink! Mash banana w almond milk. Gradually stir in remaining ingredients. 💃🏻 Spray pan w coconut oil & turn to medium-low heat. Pour batter evenly into pan. Cook 3-5 mins on each side or until both sides are golden brown. ✨ Remove from heat & top w pitaya & unsweetened coconut. Drizzle w maple syrup or honey & enjoy! 👯‍♀️🍯🍧😽
