Now that’s a rack of ribs. @stacy_adimando remembers watching these hulking beef ribs sizzle and smoke all day over an asado, or traditional open-fire “grill”, in the Argentinian countryside. Hours into being tended by the asador (cook), the meat was still pink-centered and juicy, but the outside was perfectly crispy and crackly. Each one was several inches longer than a dinner plate.
