Fresh spinach and feta turkey burgers from @freshthyme - super delicious! Paired it with roasted asparagus and part of a sweet potato. 🍔 🍠 Does anyone else feel like they are cheating when they eat a sweet potato? Tastes like dessert to me when you add a little butter and brown suga, mmmmmm.
Went hard this weekend so made these on Monday morning to attempt to get back on track-while still indulging w plenty of sugar lol 🤤
I was not into fish for most of my life (other than canned tuna which I am still a big fan of) but a couple years ago my eyes opened up to salmon and now it’s one of my favorite foods. This is smoked salmon from Trader Joe’s and I usually don’t like smokey flavored things but this was sooo good. I marinated it in some brown sugar, soy sauce, garlic and Worcestershire (took me a hundred times to spell that one right ) and then baked it for about 12 minutes. Roasted up some green beans and added half an avocado. Quick and delicious!
Grilled chicken salad for #workweeklunch Spinach, red bell peppers, cucumbers, laughing cow cheese, hard boiled egg and half an avocado. Dressing made w olive oil, soy sauce, lemon juice salt, pepper and garlic. 🎈 🎈 🎈 🎈 Sooo, I just got an instant pot and I’m super excited about it! All o have made in there so far are hard boiled eggs which turned out great, albeit a little overcooked (but I think that was partially my fault for not cooking them off enough right away). Can’t wait to try out more recipes!
Haven’t been cooking much lately- had an injured back for awhile and then was in the process of moving. Now we are finally all moved in - I finally got my new spice rack up and I’m very excited about it (yes, I’m a 👵🏼). Made sesame chicken and veggie fried rice tonight. Turned out well but I used a recipe that called to coat the chicken in an egg and cornstarch mixture. When I threw it in the skillet it kind of formed some scrambled eggs (which is ok bc we had fried rice w egg in it too but it was weird...). Very happy w our new place and I will post a pic of the new kitchen when the sink isn’t full of dishes 😝
I hurt my back over the weekend so I have been resting and not wanting to cook much-too much standing :/ Made super simple lunches- threw some chicken and a frontera sauce packet in the crock pot and let it sit until it shredded easily. Then just added some frozen veggies and some precut fruit. Nothing fancy but kept it healthy and delicious!
Easter fun! I made deviled eggs 🥚 . Super easy and super delicious. The bottom right ones are spicy “devil eggs” 😜 🐰 🐰 🐰 Tons of good food, family and time w my perfect angel of a niece made for a great Easter! 🐣🤗 👼
Mmm I should make taco salad more often! 😍🌮🌮🌮Made with ground turkey, taco seasoning, grape tomatoes, onion and red pepper all on a bed of chopped romaine. 👅
Turkey chili once again! I’ve been sick the last few days and this is my favorite comfort food. Luckily I made it ahead of time so now I can just pack it up and go so I don’t have to force myself to cook while I’m sick. 🤧😷
Shredded chicken, rice and steamed veggies. 🍚 🍚 This week is going to be super stressful and busy at work so the crock pot will be my best friend the next few days. Threw some chicken and a @fronterafoods sauce packet in the crock pot yesterday while I worked. I always keep some of those sauce packets and hand bc they make for an easy, but still delicious meal. Got the veggies in bulk from Costco and steam them in the microwave whenever I’m too lazy to roast anything. (Which is most of the time 🤷🏻♀️)
Used leftover chicken to throw into southwest quinoa. Cleaned out the cupboard w this baby. Makes for great leftovers too! 🌽 🌽 Red pepper, orange pepper, shredded chicken breast, onion, corn, black beans, cumin, looots of garlic, chili powder, salt and pepper.
Pulled pork, roasted brussels sprouts and roasted potatoes. ☃️ Basically a city wide snow day today so we cooked pork in the crock pot all day- apt smells amazing 🤤and was exactly what I needed on a day like today. Warms the soul 😊 ❄️ ❄️ ❄️ For the slaw on top of the sandwich we experimented using raw broccoli slaw and soaking it in pickle juice-it turned out surprisingly delicious!
