So relieved to have achieved competency in produce petit fours 😊 It is also a massive honour when the chef wants to take your products home for his guests 😄😶. Another semester done and dusted!
When you miss a class and make it up on a weeknight to prep for your final exam of this semester. Marzipan fruits. Definitely need to work on consistency in size but okay for a first attempt.
Belated Happy Eid post of this cake I made for our family gathering. Cinnamon layer cake with cinnamon glaze and maple buttercream, shimmer powder, tempered chocolate and freeze dried raspberries.
This idea was conceived for the kiddies along with the kids at heart. White and milk chocolate spheres filled with goodies and hand painted with our own style. Can't wait to see the expression on their faces.
Yuzu, coconut, black sesame and raspberry truffles coated in tempered milk chocolate and shimmer powder. I used to be afraid to temper chocolate but slowly, slowly I am building up my confidence and learning to trust myself more and of course, do test runs.
Maamoul duties complete. Made over 6 kilos of these bad boys for Eid with mum today. Fillings are date, cardamom and cinnamon, walnuts, rosewater and orange blossom, pistachio, rosewater and orange blossom and my personal favourite: Nutella, milk and dark chocolate, orange zest, cinnamon and cardamom with cashew and walnuts.
Practising my fruit flan making skills with this strawberry and pomegranate tart with creme diplomat and tempered chocolate. This is also what happens when you to take pictures with the nieces and nephews around. 😁😂🍓🍓🍓
When you went to the @thebankstownfoodiesmarket especially to try @chouxpatisseriensw with the intention of buying two eclairs and you come back with seven 😄 I was super happy to find out only one eclair had gelatine so had to sample the rest. Rhubarb was my favourite and I would definitely recommend trying their eclairs.
Lesson one of produce petit fours: mini eclairs, profiteroles, lemon tarts and fruit flan tarts. Doing this class today made me realise how much I missed making choux pastry.
When your family repeatedly asks for this carrot cake despite having first made it about three years ago. Layered carrot cake with cream cheese and vanilla frosting, candied pecans, crisp pearls and freeze dried raspberries.
An apple and strawberry tart is a nice way to warm up on these colder days. What are your favourite things to bake in the cooler months?

Baked this pretty little number on the weekend to practice for my gateaux, torten and cakes exam this week. Japonaise meringue, Genoise sponge, orange blossom syrup and Swiss meringue buttercream plus some tempered chocolate.
So I have a confession to make. When I am working in the kitchen I don't usually like sharing my space. I want to do everything my way but I have realised over time that you have to be more flexible especially around the kiddies. So yesterday I made a batch of chocolate chip cupcakes with Nutella and salted caramel buttercream and I took them to my family's place so the kids could decorate a cupcake each. Here is to giving, teaching and learning. 😊
