I made some Gluten Free Everything Muffins today. My secret weapon: @glutenfreebagel Everything You Knead Bagel Seasoning!! Yes! They sell the delicious topping from their bagels now. So...get on that!! I used @bobsredmill Gluten Free All-Purpose Flour, @earthbalance Soy-Free Butter Sticks, and @almondbreeze Unsweetened Almond & Cashew Milk. Among a few other muffin-y ingredients! These, BTW, were delicious!

Stumbled across @oneonlabalsa with the intention of just getting coffee and found these little GF treats. Zucchini and Spinach Buckwheat muffins. The school starting in the middle of August + us living in Southern California + super hot weather = refreshing lunches. Savory muffins are a lovely idea: packed with nutrients (eggs + veggies) and fun to eat for the kids. I prepared a batch last night, offered few for dinner instead of bread (so that the kids got used to the taste and look) and packed two in the school lunch this morning. I froze the rest for next week :-) INGREDIENTS: 1 cup grated and squeezed zucchini 1 cup baby spinach chopped in small pieces 1 cup buckwheat flour 1 1/2 tsp baking powder 1 tsp garlic powder 1 tsp baking soda 2 eggs 4 Tbsp extra virgin olive oil 4 Tbsp plain greek yogurt 100gr. asiago cheese in cubes 1/2 tsp salt PROCEDURE: In a bowl mix the eggs with the yogurt and the olive oil. Add the flour + baking powder + baking soda + salt + garlic. Mix. Slowly add the zucchini + spinach + cheese. Combine well. Fill a cupcake tin with the mix. Bake 25 min to 400F/180C. #savorymuffins

Endless zucchini crop this summer and I’m loving it! Cheesy Zucchini Muffins (Monterey Jack & Parmesan) and Whole Wheat/Oatmeal with Cinnamon, sweetness with maple syrup. Whipped up a batch of my savoury muffins this arvo. Been making these for years, always a favourite. Based on a mix of whole meal and plain self raising flour, they contain baby spinach, semi dried tomatoes, pitted kalamata olives and spring onions with some grated cheddar. Milk, eggs and yoghurt are whisked together with the addition of one unlikely ingredient - tomato relish. The flavour gently permeates the muffins and gives them sweetness and a little tangy kick. I top them with fresh tomato slices and crumbled Greek feta and then pop them in the oven for about 20 minutes. Great warm or cold, they keep for a few days....but they never last that long. - muffins

Even though I was prepped for today, I am still dealing with lots of anxious/stressful feelings today. After talking to a close friend at lunch, we both are feeling the same way. We are both aiming to finish our PhD by late spring/early summer and are starting to feel the pressure. While we know we are doing it to ourselves (putting all this pressure on) we both just want to be done. Praying God eases our minds and helps us see the path ahead. 🙏🏻 •••••••••••••••••••••••••••••••Thankfully, I prepped these SAVORY VEGGIE CHEDDAR MUFFINS yesterday and dint have to worry about what my little guy would be eating for lunch. 😅 Due to my mind being in a million places I was struggling to figure out what to feed my little fella this week. So glad I found @healthylittlefoodies blog over a year ago because when I can’t think of anything, she always has a great recipe. 🙌🏻 These muffins aren’t just great for kids but are a great snack or side for parents too. 😋 If you want the recipe check out Amy’s blog and search for vegetable muffins.
