The ingredients of the soup are tofu, tomato, dried tomato, Chinese cabbage, onions, Japanese radish, Enoki mushrooms, Shimeji mushrooms and Komatsuna. スープの具材は、豆腐、トマト、ドライトマト、白菜、玉ねぎ、日本大根、えのき茸、シメジ茸と小松菜です。残り野菜全て投入して鶏がらスープと胡麻油で味付けし、溶き卵でとじました。お昼になっても美味しいかなぁ? #meatfreemonday

Meat VS Fake Meat? So what’s the difference? I mean apart from one’s made from animals and one’s not. Well, nutritionally, they are pretty similar. There’s been an major advance in development of “fake meats” in recent years so the look, taste and have very similar nutritional profiles to meat. There is a few key differences though. Veggie alternatives unfortunately do not contain haem iron, the more absorbable form of dietary iron. Non haem iron, found from vegetable sources is unfortunately not as absorbable and is found in lesser amounts. Iron is important for red blood cell formation and function, but also provides energy and helps increase concentration. There is also less fat in some, but not all veggie products. Many people are against veggie products because of the taste. Many are against meat because it’s more “unhealthy”. There’s a huge debate about it. Price? Veggie is cheaper sometimes, but sometimes it’s more. It completely depends on the brand!! The biggest difference is most noticeably, ethics. Veggie meat is more sustainable, produces less CO2 emissions and saves animals lives. But the choice is yours. You don’t have to give up meat completely. Substitutions every now and again make all the difference to the planet, without giving up the taste or compromising on nutrition too much. #meatfreemonday is a wonderful way to incorporate the veg into your life. Whilst veggie options aren’t more healthy, eating veggie is more likely to lead to you increasing your fruit and veg consumption which in turn, can lead to a healthier diet! 🐮🐷🐰🐑🐔💖

If you’re not in the mood for cooking much (which is me these days if I’m honest 😬), just mix kale and sliced courgette ribbons with some lemon juice, a little olive oil and seasoning and let it marinate for 10 minutes. Top with grilled cherry tomatoes, avocado & sliced almonds and there’s your quick and healthy meal ready in a jiffy 😋 Enjoy your evening my friends x . . . . . . . #meatfreemonday

Butter is proving to be a tough switch for us. We love butter in our house and have never been margarine users. I don’t like the idea of margarine, it’s a synthetic gross product (IMO) and it comes in plastic tubs. Can anybody help, did you struggle to give up butter, what do you instead without producing loads of plastic waste? I’m sure the diary industry creates more pollution that making tubs for margarine...but I just don’t like it 🤢 monday
