dinner tonight. This is a creamy mushroom jasmine rice with peas and spinach cooked in my , topped with italian seitan @uptonsnaturals, drizzle of siracha and some grape tomatoes. This dinner was so quick, easy and that you won't believe its healthy for you. I saw risotto recipe and and it. Link to her risotto: https://damndelicious.net/2018/03/21/instant-pot-mushroom-risotto/ Ingredients: 2 tablespoons unsalted vegan butter 4 cloves garlic, minced 1/2 large onion, diced 8 ounces cremini mushrooms, thinly sliced 1/4 tsp himalayan salt and freshly ground black pepper, to taste 1 3/4 cups vegetable broth 1 cup of dry jasmine rice (or Arborio for risotto) 1/4 of unsweetend nut milk or more broth instead 1/4 tsp dried thyme 1/2 tsp chili flakes (optional) 2 cups baby spinach 3/4 cup frozen peas, thawed 2 tablespoons nutritional yeast Steps: Set your instantpot to the saute setting. Melt 2 tablespoons butter; add garlic and onion, and cook, stirring often, until onions have become translucent, about 3-4 minutes. Add mushrooms and cook, stirring occasionally, until tender, about 3-4 minutes; season with salt and pepper, to taste. Stir in broth, milk (or more broth instead), rice, thyme and chili flakes. Select manual setting; adjust pressure to high, and set time for 6 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions. Stir in spinach, peas and nutritional yeast until heated through, about 30 seconds to 1 minute. Serve immediately. Serves 4 (246 calories per serving) ❀ #foodrecipes

Broccoli οΌ‹ Sausage οΌ‹ Quinoa Skillet What you need? 1 Tbsp avocado oil, or olive oil 2 cloves fresh garlic, minced 1 large fresh broccoli head, chopped small (about 4-5 cups florets) 1.5 lbs. nitrate-free turkey, or chicken sausage, sliced bite-size 1 cup organic sweet corn, fresh or frozen 2 cups cooked quinoa 1 cup sun-dried tomatoes sea salt and pepper to taste Instructions: In a large skillet over medium-high heat, add the oil and garlic and cook until fragrant, about 30 seconds. Add the broccoli, sun-dried tomatoes and sausage and cook, stirring constantly for about 7-8 minutes. Add in the corn and cooked quinoa. Stir to combine, and heat - about 3 additional minutes. Season with sea salt and pepper to your taste
