COCONUT CHICKEN CURRY !! (another great one for kids) INGREDIENTS!! • 3 chicken fillets • 1 onion • 2 cloves garlic crushed • tsp of minced ginger • 2 peppers • 1 tbsp of paprika • 1 tsp of worsetershire Sauce • 1 tbsp of tomato puree • 2 tbsp of mild curry powder • Can of coconut milk METHOD.... • chop onion and add to pot with olive oil , ginger and garlic . Cook on a low heat and leave the onions sweat until soft and translucent. • Add your 3 diced chicken fillets then season with salt and pepper cook for a few mins then add your worsetershire sauce and paprika. • put in chopped peppers and tomato puree and the curry powder. Cook until the chicken is fully white in colour. Then add in your can of coconut milk and leave simmer on a low heat for 30 mins. Serve with rice and enjoy 😊 #foodforkids

I love this simple dessert. It’s quick and loved by everyone at home. Ingredients: 1 small can of coconut milk or cream. I used milk. 1/4 cup of chia seeds 1 tbs of honey Fruit of your choice. I used strawberries Some toasted nuts. I used peanuts and almonds. Mix coconut milk with honey and chia and and let it sit for 5 minuets. Blend strawberries then start adding layers of coconut chia followed by strawberries and nuts. Put in fridge to set. . . #foodforkids

Vegan Black Bean Brownies. . . Well I never planned on these being on my Instagram account, I was searching for a different kind of recipe that I hadn’t made before and came across @chocolatecoveredkatie Blog. These black bean brownies stood out to me mainly because I had all the ingredients in my cupboard and they looked easy. I’ve never used black beans in a dessert or sweet dish before so I wanted to test them out and I honestly thought they probably wouldn’t be that good (sorry Katie ) but to my surprise they are actually the BEST brownie I’ve ever tasted. . . ✔️Vegan ✔️No refined flour ✔️No eggs or dairy ✔️Nut free - yay for lunchbox snacks ✔️Can be refined sugar free ✔️No dates ✔️No banana ✔️Taste friggen amazing ✔️Contains vegetables (or legumes if you wanna get technical about it but your kids will never know😱) . Ingredients . 1 can black beans - drained and rinsed 2-3 tbsp raw cacao powder (10g) 1/2 cup oat flour (40g) 1/3 cup pure maple syrup, honey, or agave (75g) 1/4 cup coconut (40g) 2 tsp vanilla bean paste 1 tsp baking powder 1/2 cup vegan chocolate chips (I used sweet William) you can use normal choc chips if you don’t need to omit dairy and they would probably taste even better 🙊. If you want no refined sugar then leave them out of the brownie. (At your own risk mind you 😉) . Instructions . Preheat oven to 180•C. Combine all ingredients except chips in thermomix, and blend for 1 minute speed 6 or until completely smooth. Really blend well. Stir in the chips, then pour into a greased/lined loaf pan. Optional: sprinkle extra chocolate chips over the top. Cook the black bean brownies for about 15 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up! Makes 12 pieces. 115 cals per serve 🤤 . . . #foodforkids
