Simple dinner from the garden that took nearly nothing to prep. Exactly what we need these days between the evenings of cluster feeding newborn and a toddler that needs a little extra loving so she doesn't feel displaced by her new sis. . Also, the first drink I've had in what feels like forever 🍹@2townscider makes my absolute favorite cider Ginja Ninja 👊I grabbed the Marion blackberry because the farmer loves blackberries but next time it's back to ginger. . Potatoes with olive oil and sea salt baked at 400 for who knows how long. Time management has never been my thing 🤷🏼‍♀️ Spiraled zucchini, tomatoes, and @saltandsavour kraut. Plus BBQ chicken I grilled while pregnant and stocked in the deep freezer for times like these.

When craving some really good korma for dinner last night, I found this recipe on theendlessmeal.com. It is so good. I knew I wanted to use celeriac for the creamy base so I tweaked it as I'm also still off garlic and can't eat tomatoes, but you can find the original recipe here: http://ow.ly/txnb30lu1Sw Ingredients for the paste: 150g steamed celeriac 50g steamed aubergine 50g steamed courgette 300ml coconut milk 100ml veg broth (or bone broth if you can eat it) 1tbsp curry powder 1tbsp garam masala 1 1/2 tsp cumin 1 1/2 tsp coriander 1 1/2 tsp turmeric 1 1/2 tsp cardamom 1tsp sea salt Veggie Ingredients: 120g celeriac 200g fine beans 150g aubergine 1 onion or leek leaves if on low FODMAP 1tbsp coconut oil fresh leaf coriander or spinach (optional) Method: Steam all the veg (veg for paste separately from the rest of it). Make the paste - put all the ingredients in a blender or a food processor and blend until smooth, then set aside. Melt oil in a pot and brown the onion/leek leaves (I actually used the bottom part of organic bok choi as I didn't have any leek leaves left). When soft, add all the steamed veg and mix in the paste. Simmer for a few minutes, then turn the heat of and let it stand for an hour or so to let the veg absorb the flavours. You can also try making it in a slow cooker, in which case only steam the veg for the paste and put all the rest of the veg in a pot with slightly browned onion and the paste and let it cook I'd say 4-5hours at the lower setting should do it. When done, top with fresh leaf coriander or spinach. You can eat as is or with a side of your preferred grains. Being on low carb, I prefer mine with a side salad and a couple of home made raw crackers. #eatrealfood
